91083: Demonstrate understanding of basic concepts used in processing
Updated February 2014. This document has been updated in its entirety to address new issues that have arisen from moderation.
Focus
Students should be exploring a range of processing operations, testing techniques and appropriate safety procedures in processing. They should understand the importance to the success of a product of correct processing sequences (the combination of processing operations and tests) for particular materials/ingredients or purposes.
When showing their understanding, students are expected to cover operations from all four categories as outlined in Explanatory Note 4. In a food technology context, focussing solely on the effects of the substitution of ingredients will not allow the requirements of this standard to be met.
