National Certificate in Meat Processing (Preparation of Livestock) [Ref: 0693]

National Certificate in Meat Processing (Grading) with strands in Beef, Pig Meat, Sheep and Lamb, and Venison [Ref: 0691]

The New Zealand Industry Training Organisation has completed the review of the qualifications listed above that were registered in November 1999 and February 2002.

Date new versions published                                                      November 2005

The above qualifications were reviewed because of the extensive review of the meat processing unit standards, the development of new meat processing standards, and the need to meet the requirements of new companies that have decided to link their training to NQF qualifications.

The qualifications were amended to reflect the changes suggested by the industry during a series of meetings with the Meat Processing Advisory Group, which includes representatives, assessors, and providers within the meat processing sector.  The compulsory sections have been updated to provide some commonality across the meat processing qualifications; and standards not deemed to be a meat industry generic requirement have been moved to elective sections.  These include the unit standards that relate to knife use, cleaning work areas and explaining industry roles.  Elective sections have been expanded upon and in some instances added to qualifications to provide greater flexibility for new companies entering the meat processing sector.
