Summary
The National Certificate in Baking (Level 4) [Ref: 0590] was designated expiring in August 2012, and replaced by the National Certificate in Baking (Craft Baking) (Level 4) with strands in Biscuit, Bread, Cake, and Pastry, and with an optional strand in Team Leading [Ref: 1612], which was subsequently replaced by the New Zealand Certificate in Craft Baking (Level 5) with strands in Biscuit and Cake, Bread, Gluten Free, and Pastry [Ref: 1845]. The replacement qualification [Ref: 1845] was developed through the Targeted Review of Qualifications.
Competenz has received feedback from industry that the replacement qualification [Ref: 1845] is not fit for purpose for use by on-job trainees in the Baking industry. It was therefore necessary to revise qualification [Ref: 0590] to ensure its ongoing achievability and extend its expiry date. The opportunity was also taken to expire qualification [Ref: 1612] and extend the already published discontinuation date to December 2018. These two qualifications have different target audiences and the purpose statements of each have been updated to reflect the difference. The qualifications were also updated to address unit standards within both that are expiring.

Changes to structure and content
· Replaced expiring standards 6400, 6401, and 6402, with standards 26551 and 26552.
· Clarified the target audience in the purpose of the qualification.
· Amended the last date for entry into programmes leading to the replaced qualification (31 December 2014) and last date for assessment (31 December 2017) to 31 December 2015 and 31 December 2018 respectively.
While this qualification was initially replaced by the National Certificate in Baking (Craft Baking) (Level 4) with strands in Biscuit, Bread, Cake, and Pastry, with an optional strand in Team Leading [Ref: 1612], it has had its discontinuation date extended because, where Q1612 requires trainees to specialise in a particular discipline, candidates completing this qualification are able to gain experience in all disciplines of Craft Baking.
Transition
Candidates working towards version 1 of the qualification can either complete that version or transfer to version 4 before 31 December 2014, however they should be aware they only have until 31 December 2013 to complete assessment against expiring compulsory standard 8489.
Candidates working towards versions 2 and 3 of the qualification can either complete those versions or transfer to version 4.
This qualification contains standards that have replaced expiring standards. For the purposes of this qualification, people who have gained credit for the expiring standards are exempt from the requirement to gain credit for the replacement standards – see table below.

Reverse transition
Versions 2 and 3 of this qualification contain standards that have been replaced and will expire on 31 December 2015. For the purposes of this qualification, people who have gained credit for the replacement standards are exempt from the requirement to gain credit for the expiring standards – see table below.

Review
The National Certificate in Baking (Craft Baking) (Level 4) with strands in Biscuit, Bread, Cake, and Pastry, and with an optional strand in Team Leading [Ref: 1612] was originally replaced by the New Zealand Certificate in Craft Baking (Level 5) with strands in Biscuit and Cake, Bread, Gluten Free, and Pastry [Ref: 1845] as part of the mandatory review of Baking qualifications, however it was unable to be expired until now. The qualification has also been amended to ensure that it remains achievable until its expiry date.

Transition
Candidates working towards version 1 can either complete that version or transfer to version 2. Those wishing to complete the Team Leader optional strand in version 1 will need to complete assessment for standard 1983 (expiring 31 December 2014) before its expiry date.
