Summary

 

It was determined that people working as food service associates in catering services for clients with dysphagia required standardised training to safely present food and drink with appropriate consistency.

 

Consultation was carried out with the International Dysphagia Diet Standardisation Initiative (IDDSI)) and with representatives of relevant catering businesses and a new standard was developed to meet the needs of the industry.  The standard obtained consensus as valid and fit for purpose.
