Strategic Purpose Statement
This qualification provides the baking sector with bakers who have advanced bakery knowledge and skills to produce specialist products within a commercial plant baking environment. They can also assist in managing the performance of others.

Graduates will have advanced knowledge in one particular field of baking and a specialist level of proficiency in producing large volumes of baking product using automated equipment.
Graduate profile
Graduates of this qualification will be able to:
* Apply advanced principles of baking science and quality management in a plant baking environment.
* Manage stock inventory and rotation.
* Ensure compliance with health and safety, and food hygiene standards.
* Manage production costing, sales and marketing activities, supply chain management and presentation principles in a plant baking environment.
* Research new plant baking approaches, techniques and technologies.
* Supervise others within their delegated authority.

Graduates of one of the following speciality strands:
* Biscuit and Cake
* Bread
* Gluten Free
* Pastry
will also be able to:
* Lead a team to produce large volumes of specific products using automated bakery equipment in accordance with industry recognised commercial standards.
* Apply knowledge of ingredients and processes to develop new recipes or products suitable for baking in a commercial plant for one of the following speciality strands.
Education pathways
This qualification can build on either the New Zealand Certificate in Baking (Level 4) with strands in Biscuit and Cake, Bread, Gluten Free, Pastry, and Plant [Ref: 1843] or the New Zealand Certificate in Baking (Generalist) (Level 4) [Ref: 1842].
This qualification can lead to either of the following:
* New Zealand Diploma in Baking (Level 5) [Ref: 1844].
* Further study in management or food science.

Credits
