Strategic Purpose Statement |
Graduates will be able to apply knowledge and skills safe food handling and compliance with health and safety legislation in a commercial hospitality environment; preparation and cooking dishes using the main food ingredients and a range of processes; use a range of basic food preparation techniques, cooking methods and finishing techniques; basic food science and nutrition; professional customer service; work as a team member in diverse workplaces; literacy and numeracy skills.
Graduates will be able to apply to NZQA for the award of the Certificate in Hospitality (Basic Cookery) (Level 3) and will also be eligible for examination for the City and Guilds of London 7065 Certificate in Food Preparation and Culinary Arts. The Certificate in Cookery (Level 3) will lead to employment in positions such as Trainee Chef or 3rd or 4th Cook in hotels, restaurants, cafes, large commercial kitchens in hospitals or as front of house personnel. Graduates are able to progress to the Certificate in Cookery (Level 4) and this level 4 qualification in conjunction with industry experience, could lead onto the National Diploma in Hospitality (Operational Management) (Level 5) with strands in Kitchen Management, Food and Beverage Management, Rooms Division Management, and Functions Managements. |

Entry Requirements |
Open entry. Selection criteria will include an interview and may include a study skills assessment. Candidates must demonstrate a reasonable likelihood of success. Internationals IELTS Score of 5.5 with a minimum score of 5.0 in the written band.
